Who are you?
We are a food cart currently serving breakfast and lunch but stay tuned and we may do some summer dinners. Sarah does the cooking and Tim is the front of the house and drink creator (and he’s a lawyer in his off time).

What do you do?
We make fantastic food from scratch with as many local products as possible. Our Eggs Benedict is incredible but we have become well known for our FoPo Cristo (that’s our breakfast version of the Monte Cristo).

What is your inspiration? (Why do you do what you do?)
We love having the chance to work together to create great food for our customers. We got frustrated with the brunch scene in Portland because we always had to wait at least an hour before we would actually get our food. I’m starving by then! The Egg Carton is designed to be the no line brunch and a place to grab a quick sandwich to go on your way to work. We are also growing a lunch menu with the Breakfast Burger featuring homemade bacon jam.

What brought you and/or your business to the Foster-Powell Community?
We live fairly close to the neighborhood and wanted to keep our business close to home. Carts on Foster is a great option for us since it has easy access off Powell and Foster in addition to both covered and open seating. We are very excited for the pod bar to open as well.

What is your favorite way to enjoy Foster?
Winding down after work at some of the fantastic restaurants like Torta-landia.

3 Ways to unite the Fine Folks of Foster
1. Carts on Foster provides a great venue for large groups. It would make a great start to any Foster night. 2. A weekly open market for food and crafts would be a fun neighborhood night. 3. Keep working on those road improvements! It will happen.

How do you envision the future of Foster?
I think that we could have a wonderful feel to the street by continuing to maintain and improve our historic buildings and also bring business to the side streets.
